Add rice to it and let it cook. 3. Once the milk has reduced and thicken, add sugar. 4. Add cardamom powder and let it boil for two minutes. 5. Garnish with roasted nuts and raisins. Dry fruit Saffron rice Ingredients Cooked Raw Rice - 1 cup Chopped Cashew nuts Chopped Dates Chopped Almond Raisins Sugar - 3 tbsp Cardamom pods Ghee Saffron in milk Method: 1. Heat some ghee in a pan and roast the chopped almonds and cashews. Once they start turning brown, add raisins and dates. Roast them and then transfer the mixture into a bowl. 2. In the same pan, add some ghee & cooked raw rice. Toss them over low flame. 3. Then, add saffron milk, cardamom powder, dry fruits - nut mixture and sugar to it. Mix well. 4. Check for sweetness and then turn off the stove. Serve hot or at room temperature. Devotees in Vadodara prepare gigantic 'Modak' sweet to celebrate Ganesh Chaturthi

Vadodara, Sep 01 (ANI): A group of devotees in Gujarat prepared a gigantic dumpling shaped sweet, Modak, on the occasion of the Hindu festival of Ganesh Chaturthi. Ganesh Chaturthi is a 10-day popular celebration during which it is believed that Lord Ganesha bestows his presence on earth for all his devotees. The group had initiated to create the lord's favourite sweet weighing 800 kilograms for the people of Vadodora city. The sweet was made into five layers each consisting of a different ingredient. The organiser of the sweet making event, Ankur said that a team of seven to eight people prepared the biggest sweet in around 36 hours. Devotees buy decorated and colourful idols of Lord Ganesha and establish them in their homes for 10 days and revel in religious pageantry. Sep 1, 2014

Modak Ingredients For Dough Rice flour - 1 cup A pinch of Salt Hot Water - 1 cup Ghee For Filling A little Water Jaggery - 1 cup Grated fresh Coconut - 1 cup A few Cardamom pods Method: 1. To make the dough, add salt to rice flour and knead a dough with hot water. 2. For the filling: take a little water in a pot, and add jaggery to it and let it melt. After it melts, strain the jaggery syrup to remove impurities. 3. Add the coconut to the strained jaggery syrup. Pound some fresh cardamom and add it. 4. Cook it till all the moisture evaporates and it reaches a thick consistency. Let is cool. 5. Take a little dough and make a round ball by rolling it. Grease your palm, either with ghee or oil. Flatten the dough, place some filling in the center and close it from all sides sealing it. It should look like a dumpling. 6. Make a bunch of these, place it in the steamer and steam the modak for about 10-15 minutes. Remove from steamer and serve. Kesar Rabdi Ingredients Milk - 1 liter Fresh Cream - 200 ml Sugar - 100 gm A few Cardamom pods A few strands of Saffron Chopped Pistachio Chopped Almond Chopped Cashew nuts Method: 1. Boil milk in a sauce pan. Preferably non-stick and deep. 2. Once in a boil, add the cream while you make sure the flame is on 'low' and stir gently. 3. Add cardamom and a few strands of saffron while you keep up the stirring. 4. The milk will have to be boiled for about 45 minutes while being stirred so that it reduces to a creamy consistence. 5. Once you reach the required consistence, add sugar to sweeten. Garnish with chopped nuts and serve. Recommend you to follow 1. Use a non stick pan. 2. Remember to keep the flame on 'low'. 3. Constant stirring is required to keep the milk from sticking. 4. Sugar can be added later after the milk has reached the desired consistency.
